What can I do with tons of mangoes?


The question is, what can’t you do with lots of mangoes? Mangoes are delicious in drinks, salsas, baked goods, pies, fruit salads, ceviches, coleslaws, smoothies, mousse, ice cream… I could go on, but you get the idea. 😉

Can you freeze mangoes?


Yes! Stock up on mangoes when they’re in season and then freeze them to enjoy all year round. I recommend peeling them, cutting the fruit off the pit, and then cutting it into easy-to-use chunks. Put cut-up fruit in an airtight container, like a Ziplock bag, and store in the freezer for up to 6 months.

How long do mangoes last in the fridge?


When your mangoes are ripe, you can move them to the fridge to help them last longer. Ripe, whole mangoes can last up to 5 days in the fridge.

1. Mango Margarita

Two Frozen Mango Margaritas

Mango margaritas are a super easy recipe to make and perfect for celebratory events. I love to make these mango cocktails with tequila shots as a refreshing summer drink. It’s an island getaway in a glass. 😎

Of course, this recipe is still a margarita, so there’s plenty of lime in it, too. That means this drink goes great with just about any dish with lemon or lime in it – think chicken, seafood, and even beef! My favorite pairings are mango margaritas with carne asada and pico de gallo or shrimp ceviche.

You can freeze mango margaritas for up to 6 months. You can even pull the margaritas straight out of the freezer and serve frozen mango margaritas – so easy! If you prefer your mango margaritas on the rocks, store the mix in an airtight container for up to a week and then serve over ice when ready.

Mango lemonade goes well with just about any dish. Personally, I love to sip some while enjoying some baked plantain chips, and it also pairs beautifully with a suya sandwich or spicy shrimp spinach pasta!

Whenever I make grilled jerk chicken, I always make Caribbean coleslaw as a side. I’ll admit, it’s my favorite pairing, but believe me, friends, this coleslaw goes with just about any dish. 

Coleslaw is crunchiest and has the best flavor when it’s fresh, if you ask me. However, this coleslaw will last in the fridge for up to 5 days in an airtight container.
