That is a good question, and it depends more on personal preference. Some like it thicker and others thinner. I try to roll them out to about ⅛” thick. You want them thick enough they don’t break, but thin enough to not be too bready. Let me know how you do it.

You can use your hands instead. You don’t want to over work the dough. A food processor is much faster and quite effective.
