This is my favorite casserole dish of all time! I made it last night with cheddar cheese because I didn’t have Colby Jack. I also subbed jalapenos for the chiles and omitted the green onions only because I didn’t have any of those ingredients. It was delicious and very easy! Oh and I also used 2 cans of Costco canned chicken because that is what I had on hand. My family and I thank you for this amazing recipe!

I love this recipe! I add corn tortillas on the bottom and add other veggies (diced peppers, fine cut green beans, even broccoli!) and leftovers but the basic recipe is a dream.
