Hi Stephanie. You can assemble the croquettes all the way up to the point of breading them, then keep in the fridge for two days, or freeze a couple months ahead of time. Then you can coat them with the bread crumbs and eggs right before you fry. Hope this helps!

I made your recipe pretty much exactly, substituted the scotch bonnet for a jalapeño. It’s what I had. Great recipe!
After making a half a dozen I decided to emulsify the rest of the meat mixture. I think I prefer the emulsified texture, I also found it easier to work with when assembling the patties.
