Whole Wheat Accra Bananas (Deep-Fried Banana Fritters) – Mashed up overripe bananas mixed with whole wheat flour and brown sugar, then flavored with nutmeg and vanilla and fried until golden brown. Perfect for breakfast, afternoon snacks, or party food!

Did you know eating bananas can cheer you up? They contain tryptophan and vitamin B6, which assist the body in producing serotonin, a natural cheer-me-up chemical. This alone makes me want to eat bananas every day. So, if you have any overripe bananas, don’t throw them away. Make these banana puffs and brighten your day.

Whole wheat accra banana is one of my go-to quick and simple breakfast or snack options. I remember when I ate this unfailingly for breakfast every weekend. However, over these past couple of months, my accra banana weekends have taken the back seat as I experiment with new recipes for my blog. So, I was glad to revisit this tasty banana whole wheat fritter recipe.

Why Make Whole Wheat Accra Banana

Whole wheat accra banana is similar to the accra banana I’ve already posted. Only this time, they pack a double punch, improved nutrition while maintaining the great taste. Do I dare to call them healthy? Some people say deep-fried foods don’t have any business in a healthy diet, but sometimes we have to eat what we love in moderation so we don’t feel deprived. It’s not entirely healthy, but some of the banana and whole wheat flour’s health benefits make me feel much better about indulging.

Accra bananas are a popular snack and breakfast food in most West African countries. In this recipe, bananas are mashed and mixed with whole wheat flour and brown sugar, then flavored with nutmeg and vanilla and fried until golden brown.

Enjoy this accra recipe as a snack, breakfast, or party meal. They’re best served warm or at room temperature.

Recipe Ingredients

What you need to make whole wheat accra banana
  1. Bananas are the leading player in this recipe. The riper, the better. You could also use overripe plantains if you have some that need to be used up.
  2. Whole wheat flour makes a healthier and more nutritious version than white flour. It’s also more filling. 😋
  3. Additional Ingredients Baking powder, brown sugar, nutmeg, and vanilla enhance the flavor and texture for soul-satisfying goodness.
  4. Oil – For deep frying, you’ll want an oil that can stand up to high heat. Peanut and grapeseed oil are more economical. But if you really want to make it healthier, fry it in avocado oil.

How to Make Whole Wheat Accra Banana Fritters

Mash the bananas, add the rest of the ingredients, and mix well
Make the fritters and fry them
  • Mash bananas with a fork or puree them in a food processor or blender.
  • Mix – In a medium bowl, mix the mashed bananas, whole wheat flour, sugar, baking powder, and salt. Mix well to the consistency of a creamy batter.
  • Flavor – Finally, stir in the nutmeg and vanilla and let it rest for 10 minutes.
  • Heat a large cast iron skillet with up to ½ an inch of oil over medium-high heat (375℉/190℃) until hot but not smoking.
  • Fry – Scoop the batter and gently place it in the hot oil. Turn once and fry until golden brown, about 5 minutes. Fry your accra in batches so you don’t overcrowd the pan (the fritters may become soggy by absorbing excess oil).
  • Drain – Remove the fritters from the skillet with a slotted spoon, letting excess oil drain back into the skillet. Place them on paper towels.
  • Serve warm.

Tips and Tricks

  1. Yes, you can make these gluten-free. Use your favorite gluten-free all-purpose flour and proceed with the recipe. Bananas are a perfect ingredient for gluten-free goodness.
  2. You can freeze the fried whole wheat accra banana for later (up to three months in a freezer-safe ziplock bag). You can reheat them in the oven or air fryer.
  3. Don’t waste the used oil. Let it cool, strain it, store it in a food-safe plastic bottle, and reuse it.

What Goes With Whole Wheat Accra Bananas

Make an African breakfast charcuterie board with easy fried mandazi or baked mandazi, akara (black-eyed pea fritters), and mealie (South African cornbread). Make a pot of coffee and enjoy.

Whole Wheat Accra Bananas

Ingredients

  • 4 large bananas (1½ cups mashed bananas)
  • 1½ cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 tablespoons brown sugar
  • ½ teaspoon nutmeg
  • ½ teaspoon vanilla extract
  • Oil for deep frying

Instructions

  • Mash bananas with a spoon or puree them in a food processor or blender.

    Dear Immaculate,
    You are simply genius with these recipes! I had a box of over-ripe plantain that was not friable so I ran to Africanbites hoping to get Accra recipe – boom, there it was. Replacing banana with plantain made me skeptical but it came out great! My husband and kids love these, thanks.

    Just want to thank you for this recipe. I have never made accra banana, for a first time, it was great. Happened to fall onto your website after my kid sister asked me for puff puff recipe. She followed your puff puff recipe and it was wonderful.
