Caribbean-Style Chow Mein – Chicken marinated with green seasoning, loaded with vegetables and chicken. So much better than the take-out version.
Lo Mein in the Caribbean? Well, yeah! After all, there are plenty of Chinese immigrants who migrated to the Islands and contributed to the food culture, though not as heavily as other countries, but a worthy mention.
This Caribbean Style Chow Mein is a worthy mention. It’s quick and easy to put together overflowing with flavor and a plate full of texture and contrasting flavors.
It has everything you need in a meal, chunks of protein, vegetables, and good old carbohydrates. What’s not to love? Chow Mein is one of those dishes that most people have tried at least once – it’s readily available at fast food restaurants and a big seller. And we all have our favorite joints for it. Don’t you?

It is so versatile, many many ways to make them, just switch it up. This is just one way of making it – I play with it all the time, depending on my mood.
Here, I used chicken thighs (bite-sized pieces), shrimp and or/chicken breast works as well. The basic vegetables are sliced cabbage and julienned (thinly sliced) carrots – the rest is up to you and what you have in your refrigerator. Hey, tell you what, why not use this opportunity to clean out the refrigerator using the vegetables you have on hand. Great idea, right?
So what makes this Caribbean? Not much other than spices (green seasoning and hot sauce or pepper). But just these few spices pack a punch.

Notes:
- I like using sliced chili pepper but when I’m making it for kids then I throw in the whole chili pepper without slicing. I want the flavor not the heat.
- Egg noodles are used to make chow mein but you can sub with spaghetti. Ran out of egg noodles so I used Japanese noodles instead, worked out just fine.

Chow mein Caribbean Style
Ingredients
Marinated Chicken
- ½ – 3/4 pound skinless boneless chicken thighs cut in bite size pieces
- ½ teaspoon green Seasoning replace with 5 spice or parsley and cilantro
- ½ teaspoon ginger
- ¼ teaspoon garlic
- 1/2 teaspoon white pepper
- 1 teaspoon oyster sauce
- 1 teaspoon corn starch
Chow mein sauce
- 2 tablespoons Oyster sauce
- 2 – tablespoons soy sauce
- 1 teaspoons sugar
- ½ teaspoon minced ginger
- ½ teaspoon minced garlic
- ½ Tablespoon sesame oil
- 2 tablespoons water
Chow Mein
- 8 ounces lo mien egg noodles
- 3-4 Tablespoons vegetable or Canola oil
- 1 cup broccoli sliced
- 1 small red bell pepper julienned
- 2 cups carrot julienned
- 1 cup snow peas
- ½ onion sliced onions
- 1 chili pepper whole sub with 1/2 teaspoon or more siriracha
- 1-2 Tablespoons parsley and/or cilantro optional
Instructions
- Place chicken pieces, green seasoning sauce, oyster sauce, cornstarch and white powder in a small bowl – thoroughly mix to combine. Let it rest while you prepare the vegetables and other ingredients
- Cook the chow mein noodles according to package directions, drain well, and set aside.
- In a small bowl, mix water, oyster and soy sauce, garlic, sesame oil ,ginger and sugar
- Make sure all the vegetables are sliced and ready to go.
- Heat a wok or large skillet with about 2 Tablespoons oil over medium heat, then add chicken, and let it rest for about 30 seconds before turning over. Cook for a minute. Throw in chili pepper, and continue stirring.
- Then add toughest vegetable first, Broccoli, carrots snow peas, bell pepper and onions
- Stir continuously for until desired tenderness is reached.You may have to add some oil as needed to prevent burns. Throw in egg noodles and chow mien sauce, stir evenly coated with sauce, and add scallions, herbs. Toss to distribute evenly, Adjust to taste with oyster or soy sauce. Serve immediately.

Love this recipe, been using it for about 2 years or more now. The kids just love it. I tend to make it without any meat or fish, sometimes I’ll add fresh king prawns or make salmon teriyaki on the side . Thank you for sharing

This looks like a lot of fun! I checked out your green seasoning and love it. We buy something called sofrito from the Latin section of the grocery that seems to be similar (and not what they sofrito in Spain which has tomatoes and peppers). It looks simple to make yourself and I love the idea of freezing it to have on hand to add to dishes like this.
